So what is an Island Layout? It is a way of laying out your restaurant so that stoves serve a group of tables which are all located right next to them. Imagine each self-contained group of tables and stove as its own island and you’ll have the picture.

Now picture laying out your restaurant in such a way that it consists of multiple islands. The result will be the most efficient way to organize your restaurant.

Why use this layout? If you set it up right, each chef will be right beside the tables they serve, while the waiters have to move as little as possible to take care of their tables. Lay out your restaurant with islands, and the food handling portions of your business will become much more efficient.
